Pepper Varieties

The Scoville scale is a measure of the ‘hotness’ of a chili pepper. The scale is actually a measure of the concentration of the chemical compound capsaicin which is the active component that produces the heat sensation for humans. Note that the actual Scoville rating or “hotness” of any chili pepper can vary greatly dependent on many factors including temperature, sunlight, moisture, soil, and fertilizer.
