Fresh Start: Planting Your Fall Vegetable Garden

Are the dog days of August getting you down? Just the thought of fall garden crops can be refreshing!

What Vegetables to Plant?

Figuring out what vegetables to plant in August is a piece of cake. Our friends at the OSU Oklahoma Cooperative Extension Service have easy-to-follow lists and tips for fall garden crops. If their office is near, drop in. If not, you can find online information to help you decide what vegetables to plant in August. Or, just read the back of your seed packets! They have specific guidelines on which plants are the best choices for fall vegetable gardens.

Planting a fall vegetable garden allows your seeds to germinate in the warm soil of late summer and then to cool off for a long, productive growing season. While choices vary by climate, some of the vegetables to plant in August work for most parts of the country.

Create Your Dream Garden

Any spring veggies that popped out when the temperatures climbed are good candidates when deciding what vegetables to plant in August. Create your dream fall vegetable garden with lettuce and other delicate greens such as bok choy and spinach that thrive in cooler temperatures. These varieties make fresh, welcome fall garden crops, along with radishes and micro-greens. They germinate quickly, so they can be re-seeded over a period of weeks for a continuous supply.

They’ll get an early start, then grow and sweeten as the temperatures drop. Any of the cole crops—broccoli, cabbage, and Brussels sprouts are great fall garden crops. In some climates, fall and winter are the only seasons to get good results with these species.
